Watermelon Salsa
Watermelon Salsa1/2 cup diced red onion1/2 cup diced white onion1 cup diced red tomato1 Fresh Jalapeno, seeded and diced1 tsp garlic powder1.5 tsp black pepper, fresh ground1 Tbs canola oil1/4 bunch cilantro leaves, diced1.5 cups cubed watermelonMix All ingredients, allow to sit for 20 minutes, then drain.
Rattlesnake
Rattlesnake2 snakes2 Fresh jalapenos, sliced2 cups waterjuice of 6 limes2 Tbs Fajita seasoningYazoo’s Chipotle Bold SauceYazoo’s BBQ RubCut snake into 2 inch pieces. Assemble jalapenos, water, lime juice and Fajita seasoning and whisk, then marinate snake for 30 minutes. Remove from marinade and place in smoker in an uncovered pan for 30 to 45 minutes or until Snake meat is opaque and flaky. Starting at backbone, slice down on each piece to remove meat from bones. Glaze with Yazoo’s Chipotle Bold Sauce.
Potato Salad
Potato Salad2 lbs Yukon gold potatoes1 lb raw bacon1/2 bunch chives1 cup sour cream1/4 cup milk1/2 cup ranch seasoning2 tsp salt or to taste2 tsp pepper or to tasteDice and boil potatoes, leaving skin on. Boil until tender then drain. Cook bacon until crisp, then drain and crumble. Dice chives. Add all ingredients except milk and stir to incorporate. Use milk to adjust consistency.
Yazoo’ s Georgia Peach Crown Pork Roast
Yazoo’ s Georgia Peach Crown Pork RoastMarinade1/2 gallon apple juice2 cans peach necter1 cup Yazoo’s Ultimate Rub32 oz chicken stock Yazoo’s Chipotle Bold SauceFrench bones from roast then trim all fat and silver skin from all sides of roast. Assemble marinade ingredients and place pork in for 4 hours. Remove and rub with a thick coat of Yazoo’s BBQ Rub. Place in pan in fridge for 2 more hours. Place in smoker at 250 degrees for 2.5 hours or until internal temp is 150 degrees, then remove, place in pan and cover for a minimum of 20 minutes to rest. Slice through each bone for chops, then glaze with Yazoo’s Chipotle Bold Sauce and Peach Glaze.
Grilled Peaches
Grilled PeachesHalf and pit peaches. Coat each half with 2 Tbs brown sugar and allow to sit for 30 minutes or until brown sugar has dissolved. Place cut side down on hot grill for 10-15 minutes or until a bit of char has appeared. Drizzle with honey, then slice each half in half.
Yazoo’s Peach Glaze
Yazoo’s Peach Glaze6 fresh peaches, peeled and pitted2 Tbs sugar1 Tbs Yazoo’s Ultimate Rub2 Tbs WaterChop peaches and cook with water and sugar until soft. Puree, add rub.
